In winemaking, pomace plays an important role depending on the style:
Red wine production: The juice ferments with the pomace, which gives the wine its color, tannins, and structure. 
White wine production: The pomace is usually removed quickly to keep the wine lighter and less tannic. 

Pomace doesn’t go to waste—it’s often reused in several ways:
Distilled into spirits like grappa 
Compost or fertilizer in vineyards 
Animal feed 
Extracting additional compounds (like tannins or antioxidants) 

In short, pomace is the “leftovers” of winemaking—but it’s still full of value.
